Chipotle Club Sourdough Sandwiches

Nothing beats an effortless meal for busy people who LOVE full flavor sandwiches! Turn this easy recipe into a meal or quick appetizer for a crowd-pleasing favorite. 

Prep Time: 15 minutes   |   Servings: 4

Ingredients:

  • 12 slices of Essential Baking Sourdough Bread
  • 8 slices of cooked bacon
  • 8 slices of your favorite lunch meat
  • 4 slices of cheddar cheese
  • 4 slices of onion
  • 1 ripe avocado, thinly sliced
  • 1 tomato, thinly sliced
  • 1 cup shredded lettuce
  • Chipotle Mayo (see recipe below)

Chipotle Mayo:

  • 1/2 cup mayonnaise
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon adobo sauce (from the chipotle peppers)
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions:

  1. Prepare Chipotle Mayo:
    • In a small bowl, combine mayonnaise, chopped chipotle peppers, adobo sauce, minced garlic, lime juice, salt, and pepper. Mix well and set aside.
  2. Assemble the Sandwiches:
    • Lay out 4 slices of bread. Spread a generous amount of chipotle mayo on each slice.
    • Place onion, 2 pieces of bacon, cheese and tomato on each slice.
    • Top with another slice of sourdough bread (chipotle mayo optional on this piece).
    • Add 2 slices of lunch meat on top of the second slice, followed by slices of avocado and lettuce.
    • Spread chipotle mayo on the last piece of bread, then place on top of each stack.
    • Cut in half (or 4 pieces) and hold together with large toothpicks.
