Quality Certifications – Organic, Non-GMO, GFSI, SQF, Kosher, & Gluten-Free

Certification definitions:

QAI Certified Organic means that a product is certified organic in accordance with the USDA’s National Organic Program by the Quality Assurance International.

USDA Certified Organic** means that the product was certified following the standards set by the United States Department of Agriculture National Organic Program.

Non-GMO Certified means that a product is certified as Non-GMO by the Non-GMO Project.

Kosher Certified means that a product is certified Kosher by Seattle Va’ad.

Gluten-Free Certified means that a product is certified Gluten-Free by the GFCO.

       Safe Quality Foods (SQF) certified by Global Food Safety Initiative (GFSI).

**The USDA defines organic as a labeling term that indicates that the food or other agricultural product has been produced through approved methods. These methods integrate cultural, biological, and mechanical practices that foster cycling of resources, promote ecological balance, and conserve biodiversity. Synthetic fertilizers, sewage sludge, irradiation, and genetic engineering may not be used.

Our artisan organic bread is certified organic by Quality Assurance International, a USDA-accredited certifying agency following the organic standards of the National Organic Program set by the United States Department of Agriculture.

We are Safe Quality Foods (SQF) certified by Global Food Safety Initiative (GFSI). SQF is the largest GFSI certifying agency in the US that requires a thorough and disciplined food safety system with routine surveillance audits performed yearly. The Global Food Safety Initiative (GFSI) is a collaboration between the world’s leading food safety experts from retailer, manufacturer, and food service companies. The majority of our artisan organic breads have also been Non-GMO Certified by the Non-GMO Project.

Our products are made in a bakery that uses wheat, eggs, milk, soy, sesame, and tree nuts.

We are also pleased to offer a line of Certified Gluten-Free bread and pizza crust. Our Gluten-Free products are manufactured in a separate bakery that is wheat-free, gluten-free, dairy-free, nut free, peanut free, coconut free, kosher certified. The only allergens used in that facility are egg and sesame. No other allergens of the top 9 are used.

Artisan Breads

Our breads are made using traditional artisan techniques combined with the best organic ingredients we can find. We start with four basic ingredients; Unbleached Wheat Flour, Water, Sea Salt, and naturally occurring yeast. Thanks to our very own sourdough starters; our dough experiences a long, natural fermentation process to encourage the naturally occurring yeast.

Our pastries are hand crafted using time-honored, labor-intensive techniques and premium quality, all natural ingredients making them stand out for their superior flavor and quality. These techniques and ingredients, combined with delicate, subtle flavor combinations provide an unforgettable experience.

Classical Desserts

Our desserts are a delectable mix of European-style technique and the highest quality, all natural, Pacific Northwest ingredients available. Everything is made in small batches entirely from scratch to create edible works of art that can be enjoyed for celebrations big and small.
