A question that comes up from consumers from time to time is whether we changed our Pain du George or Whole Wheat Rolls. We have not made a recipe change, however the retail labels did change. Pain du George and Whole Wheat Rolls – both are made with the same dough. We use a specially milled flour that has about 25% of the coarsest flakes of bran removed to achieve a lighter texture and flavor. During an inspection last year we were informed that we could not list the ingredient as “organic whole wheat flour” because it is not truly whole wheat, so we had to change the ingredient lists to better represent the product. Hence, we now are required to list both “organic unbleached wheat flour” and “organic whole wheat flour” on the label.
