Our breads are baked in the old world European tradition of hand crafted baking artisanship with uncompromising quality and commitment to the use of fresh organic ingredients. Our pastries and desserts are hand crafted in small batches using European-style techniques with the finest quality ingredients available. None of our products contain anything derived from synthetic additives, toxic chemicals or GMOs.

The Essential Baking Company was founded in 1994 by George DePasquale and the late Jeff Fairhall. Jeff founded Essential Foods, a startup company that made and sold wrap sandwiches. George came to Seattle from San Francisco to pursue his passions of baking and playing bass guitar. Luckily, George and Jeff’s paths crossed and they started a business selling George’s signature breads at the Fremont Farmers Market.
In 1998, the bakery moved to the old Buchan Bakery building in Wallingford and established its first bakery café. A dozen years later we joined with Parisian Star Desserts, founded by French native Pierre Fauvet. Pierre brought decades of experience making exquisite desserts that look as good as they taste. Having outgrown our original bakery space, in 2010 we relocated to the Georgetown neighborhood in south Seattle. Today we proudly provide breads, pastries, crackers and desserts to the finest establishments through the Pacific Northwest including grocery stores, cafes, restaurants, schools and hospitals.
Some 15 years after the Company’s founding, you can still find George sharing his passion by teaching bread and pizza making classes around Seattle.

OUR COMMUNITY COMMITMENT
While our delicious wholesome baked goods nourish the senses, we also want to nourish our community, our environment and those in need. We support a variety of needs in our community – basic needs (food and shelter); health and wellness and culture. We provide donations to dozens of food banks, schools and other community organizations and support a variety of community events.

Our founding values include a commitment to environmentally and socially responsible operations. Our bakery has been organic since its founding. We are a Certified Organic Company which means that we don’t use anything made with or derived from synthetic additives, toxic chemicals or genetically modified organisms (GMO). In an effort to limit our carbon emissions, our delivery fleet runs on biodiesel fuel. We support and sponsor organizations dedicated to organic farming, the integrity of our food system and a more sustainable world.
